You will need:
4 large Yukon Gold potatoes, cooked and peeled
1 cup mayonnaise
1 teaspoon sweet pickle relish
salt and pepper to taste
2 teaspoons dijon mustard
6 hard boiled eggs, peeled and mashed up into egg salad sized pieces
1/4 cup diced sweet onion or 1 teaspoon onion powder
1 teaspoon garlic powder
smoked paprika for the top
Mash potatoes and mayo into chunks with a fork
add mustard, pickle relish, salt and pepper, mustard,onion, and garlic powder
add chopped up hard boiled eggs
Put into a cute summer bowl to serve
sprinkle top with paprika
cover with clear wrap or foil and refrigerate for 1 hour before serving
